Prepare eggless fruit and nut cake under 20 minutes


As the Valentine’s Day is arriving, every person in love is looking for some gifting ideas. It’s easy to take a decision when your budget is high and you are super-rich. But that’s not the case with most of the people out there. Generally, middle-class people look for the ideas that are budget-friendly and can give a very special feeling to your soulmate. And it proves to be a cherry on the cake when your idea doesn’t even require much of your efforts and your precious time.

We have something that exactly serves the same purpose. It’s an eggless fruit and nut cake that you can easily prepare for 20 minutes. So, let’s learn how to make it.


  • 300 gm plain flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 150 ml oil
  • 200 ml water
  • 100 gm dates (pitted and chopped)
  • 150 gm raisins or sultanas
  • 100 gm nuts (cashew nuts, almonds, walnuts)
  • 150 gm jaggery (or substitute with dark muscovado sugar)
  • 150 gm sugar
  • 3 tbsp fruit jam (preferably without added sugar)
  • 2 tsp mixed spice powder
  • Grated rind of 1 lime


Take an 8″ square or 9″ round cake tin and grease its bottom with a butter paper. Mix the main ingredients flour, baking powder and baking soda into a mixing bowl and sieve once to make it a uniform mixture. Now shallow fry the fruit and nuts in a pan and pour the Jam, Sugar Mixture in 100 ml water along with jaggery on the pan. Keep stirring on low flame until sugar and jaggery completely melts. After cooling the mixture, add the remaining 100ml water with rind and spices. Mix and beat the flour mixture until there are no lumps. Transfer the mixture to the tin and bake it at 150 degree Celsius in a pre-heated oven for 1 hour. Your eggless fruit and nut cake is ready. You can use chocolate or cream as topping if you like.
